Ошибка в коде Telegram Bot Python. Как исправить?

NameError: name 'message' is not defined

Вы передаёте в функцию start аргумент m, но дальше в коде используете message:

def start(m):
    bot.send_message(message.chat.id, "Выбери замок")
     ...

Просто замените message на m:

def start(m):
    bot.send_message(m.chat.id, "Выбери замок")
    ...

P.S.

def messages(message):
  # этот if не будет работать из-за заглавной 'K' 
  if 'Красный' in message.text.lower():
    bot.send_message(message.chat.id, 'Вы выбрали красный замок')
    ....

Всё работает но сообщение не выводится когда я жму красный
